Responsibilities & Context

  • Assist F&B Manager to achieve budgeted food sales, beverage sales, labor costs and profitability.
  • Ensure timely analysis of Food & Beverage Prices in comparison with the competitors’ prices.
  • Participate and input towards F&B Marketing activities.
  • Prepare Sales Promotions & Mailings.
  • Ensure competitive analysis every six months by calling the competitors and gathering data such as banquet kits, room rental rates, etc.
  • Conduct telemarketing to previous clients to inquire about possible future bookings.
  • Handle all Food & Beverage inquiries and ensure timely follow-up on the same business day.
  • Co-ordinate with all large group meetings/banquet planners and their specific group requirements with the services & facilities offered. This includes proposals, contracts, estimated and actual function statements. Discuss with Chef, along with banquet or conferences, regarding matters related to Food.
  • Confirm all details related to group functions with meeting/banquet planners.
  • Supervise daily paper flow including Proposals, and Function Contracts.
  • Ensure maintenance of Hotel Credit Policies.
  • Complete monthly forecast and assist in menu planning and pricing.
  • Develop and maintain department manual.
  • Supervise weekly payroll input.
  • Assure bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits prepared.
  • Complete monthly inventory and assure timely completion of function bills.
  • Consistently check Banquet Food and Beverage quality, Banquet services and pallet presentation.
  • Ensure that services meet customer specifications.
  • Liaise on an on-going basis with the Sales Department to ensure all client needs and requirements are met.
  • Establish a rapport with groups to ensure guest satisfaction and repeat business.
  • Minimize number of customer complaints.
  • Ensure a professional attitude and proper business attire of F&B Service staff when on property, ready to meet or serve a client.
  • Maintain a good teamwork with co-workers and management.
  • Contribute in staff training and development.
  • Overall maintenance of the operations at a level in accordance with the standards prescribed.
  • Any task assigned by Management.
