Responsibilities & Context

  • Lead the development of new bakery products (cookies, biscuits, cakes) from initial concept through commercialization.
  • Oversee formulation to meet desired quality, taste, texture, and nutritional requirements.
  • Innovate and improve existing products to enhance quality and market competitiveness.
  • Source new ingredients and technologies to incorporate into product development.
  • Create detailed production schedules that account for all stages from preparation to packaging.
  • Allocate resources effectively, ensuring the availability of raw materials and machinery for each product line.
  • Develop and implement SOPs to standardize production processes and reduce errors.
  • Conduct regular quality checks and taste tests to ensure products meet regulatory standards and consumer expectations.
  • Implement and maintain Good Manufacturing Practices (GMP) and Hazard Analysis and Critical Control Points (HACCP).
  • Ensure that all products comply with local, national, and international food safety standards.
  • Work with the quality assurance team to establish product specifications and quality standards.
  • Collaborate with marketing and sales teams to understand market needs and consumer feedback.
  • Coordinate with production, procurement, and quality assurance teams to ensure seamless product development and delivery.
  • Encourage a culture of continuous improvement within the R&D team by adopting innovative techniques and processes.
  • Implement a feedback loop for production teams to report challenges, enabling quick adjustments and optimizations.
  • Evaluate and adopt new technologies to enhance the efficiency and effectiveness of product development.
  • Mentor and develop the R&D team, fostering a collaborative environment focused on innovation and quality.
  • Encourage knowledge sharing within the team to improve product development processes.
  • Conduct market research to identify opportunities for new product development in the bakery and packaged food sectors.
  • Stay updated with industry trends, consumer preferences, and advancements in food technology.
  • Identify cost-saving opportunities during product development without compromising quality or innovation.
  • Maintain comprehensive documentation of all R&D activities, including experimental data, formulations, and project reports.
  • Provide regular updates on production progress, potential delays, and issues that could impact the timeline.
  • Present findings and recommendations to senior management to ensure alignment with business objectives.
  • Carry out any assignments given by the management, ensuring timely completion and quality output.
