Requirements

Education

Bachelor’s Degree majoring in Food Engineering/Doctor of Veterinary Medicine/ chemistry from reputed university.

Experience

  • 2 to 4 years

    Manufacturing (FMCG), Food (Packaged)/Beverage, Agro based firms (incl. Agro Processing/Seed/GM)

Responsibilities & Context

Evaluate daily orders, stock status of different product categories and prepare red meat (cattle, goat and sheep) production plan

Evaluate advance orders, stock availability and submit orders for live animal purchase to procurement team

Ensure that a specific amount of “safety stock” is maintained for each product category Production Supervision & Productivity

Ensure the availability of the right number of employees and brief them about the production plan at the beginning of the shift

Supervise, evaluate and direct the red-meat further processing in the production floor employees for performing the operations according to specific SOPs with full attention to safety, quality and higher productivity

Monitor and track waste, rework and machine down time

Observe cutting machines in operation, ensure even flow of animal carcasses and detect any jamming, improper feeding, or foreign materials in the production line

Perform production paperwork, receiving, and inventory control procedures with complete accuracy

Identify, through a proactive approach, potential cost-saving and efficiency gain opportunities to improve overall red-meat operations

Conduct production yield analysis to determine the efficiency of red-meat operations and take corrective actions where necessary

Manage inventory and cost control

Conduct accurate weekly, period end, and year-end departmental inventories

Ensure that all the cutting machine, blades, saws, or knives are cleaned and lubricated using steam hose, scrapers, brush, or oil cans etc

Analyze equipment on a daily basis and refer with maintenance team Safety

Complete and review all Hazard Analysis and Critical Control Points (HACCP) requirements and paperwork

Ensuring all food safety and other regulatory requirements are fully complied with throughout the production process

Identify and take immediate action to eliminate improper practices or hazardous conditions

Ensure safety devices, where appropriate, are installed and working properly

Ensure production floor workers perform all duties within company safety standards and wear Personal Protective Equipment (PPE)

Report all accidents and deficiencies to management; complete accident investigations and report within prescribed time of incident

Ensure quality protocols and SOPs are openly communicated and followed during the production process. For any type of quality related clarification, consult the QA Manager and/or Production Manager

Ensure the halal procedure has been complied with every step of the production

Maintains quality of product by establishing and enforcing organization standards and SOPs

Understand the concepts of FIFO (First-In-First-Out) on perishable products and ensure successful implementation of FIFO throughout packaging operations of red meat

Ensure all required sanitation functions are within acceptable standards

Assist the new product development (including packaging) team to develop recipe for new products with due consideration for taste, quality and capability of existing production machineries

Prepare daily production report of different categories of products
