Responsibilities & Context

The Executive Chef plays a pivotal role in establishing a fine dining restaurant’s reputation by leading a talented and creative kitchen team, delivering an innovative menu, and ensuring an exceptional culinary experience for guests. This role requires strategic oversight of food production operations while driving excellence in quality, innovation, and team performance.

Leadership & Team Development:

  • Lead the kitchen brigade, fostering a culture of innovation, collaboration, and continuous improvement.
  • Identify effective strategies for succession planning to ensure sustainable team growth.
  • Recruit, manage, train, and develop kitchen team members to maintain high standards.
  • Address staff performance issues in compliance with company policies.

    Menu Development & Culinary Excellence:

  • Create and regularly review menus to meet and exceed customer expectations while adhering to brand standards.
  • Ensure consistent production of high-quality food across all kitchen operations.
  • Stay abreast of market trends and incorporate them into menu offerings.

    Operational Management:

  • Oversee all aspects of kitchen operations, including quality control, budgeting, resource planning, and administrative functions.
  • Ensure compliance with health, safety, and food safety regulations.
  • Manage food control systems proactively to achieve target margins.
  • Develop and maintain monthly working schedules in line with local legislation.

    Guest Relations:

  • Build positive customer relationships through proactive guest interaction and feedback collection.
  • Address and resolve guest and team member issues promptly and effectively.

    Resource Management:

  • Ensure the availability of adequate resources to meet business needs without compromising standards.
  • Control costs to improve gross profit margins while achieving departmental and financial objectives.
  • Implement and adhere to food wastage programs to ensure environmental and financial targets are met.

    Collaboration & Communication:

  • Maintain strong communication and work relationships with guests, team members, contractors, and suppliers.
  • Conduct regular team meetings and ensure follow-up on key action points through documented minutes.
