- Daily Production: Preparing biscuits, pastries, mousse cakes, and custom cake order from scratch. This includes precise ingredient scaling, dough shaping, baking, and decorating.
- Quality & Recipe Adherence: Ensuring consistency and taste by strictly following established recipes and mastering a variety of baking techniques.
- Kitchen Supervision: Guide commis chefs, apprentices, and kitchen porters on execution techniques, workflow speed, and safety standards.
- Hygiene & Operations: Maintaining a clean, sanitized workspace and following stringent food safety guidelines.
- Inventory & Stocking: Organising the kitchen in an appealing manner, monitoring raw materials, ordering on time, maintaining FIFO .
